Easy Banana Muesli Bars

Muesli bars are a great snack for the kids' lunchboxes. This recipe for Easy Banana Muesli Bars is super simple to make and budget-friendly.

Muesli bars are a healthy option and this one has no added sugar, just fruit. You can modify it to suit your dietary requirements. If your school has a no-nut policy, just choose a muesli bar without. 

These could not be easier to make (hence the name!). You can get the kids making this recipe, taking ownership of their food and having fun in the kitchen.

We love making snacks from scratch, because you know what the ingredients are and there are no nasty additives. These muesli bars are also so much cheaper than buying muesli bars and they have no plastic packaging either. 

Easy Banana Muesli Bars

Ingredients:

3 cups muesli 

2 large ripe bananas

1/2 cup dried fruit 

1 egg

1 tablespoon oil (coconut works well)

Method:

Preheat the oven to medium, 180 degrees and line a small slice tin with baking paper.

Mash the bananas, add eggs and oil and whisk. Add the other ingredients and combine well. 

Press into the slice tin and bake for 20 minutes until nice and firm. Cool on a wire rack and cut into bars with a serrated knife. 

Muesli Bar Flavour Variations


Play around with the ingredients and you will always have new flavours to keep the kids interested! 

For your added 1/2 cup of dried fruit try these combos: 

  • dried apple with 2 teaspoons of cinnamon 
  • dried apricots and a touch of honey 
  • cranberries and pistachios
  • chocolate chips and dried bananas 
  • coconut and goji berries
  • sultanas and sunflower seeds
  • raisins and pumpkin seeds

You are only limited by your imagination!! 

This basic recipe is so versatile and it will soon become a family favourite in your house. It's a great way to use up bananas that are going a bit brown as well. Make double batches and freeze the excess. It holds up well in the freezer. 

If you have a thermomix, you can make the mashing and whisking quicker - but just remember to put the machine on reverse to combine the muesli.
